Thai-Style Fish With Coconut Sauce
- 1/4 cup soy sauce
- 1 tbsp chopped cilantro, plus additional, to serve
- 1 piece (1 inch) ginger, grated
- 1 None long red chili pepper, finely chopped, plus additional, to serve
- 1 clove garlic, crushed
- 4 None white fish fillets (6 oz each)
- 1/4 cup coconut milk
- 2 tsp brown sugar
- 1 tbsp lime juice
- Preheat the oven to 325u0b0F. For marinade, combine soy sauce, cilantro, ginger, chili pepper and garlic in a small bowl.
- Place each piece of fish on a 12-inch square piece of parchment paper. Spoon a little marinade over fish, reserving 1 tbsp.
- Gather corners of paper together and tie with string to make loose packets. Place on a baking pan.
- Bake 12-15 mins, until fish flakes easily with a fork.
- Combine coconut milk, sugar and reserved marinade in a small saucepan on low heat. Stir until sugar dissolves. Simmer for 2 mins. Stir in lime juice.
- Sprinkle fish with additional chili pepper and cilantro. Serve with sauce.
