Banana And Irish Cream Bread Pudding
- 2 1/2 cups heavy cream
- 1/2 cup milk
- 1/2 cup Irish cream liqueur
- 1/4 cup honey
- 1 None cinnamon stick
- 1 None vanilla bean, split lengthwise and seeds scraped
- 4 None eggs
- 8 slices crusty bread
- 2 medium bananas, thickly sliced
- 1 tbsp demerara sugar
- Preheat the oven to 350u0b0F. Lightly grease a 2-quart baking dish.
- Place cream, milk, Irish cream, honey, cinnamon stick, vanilla bean and seeds in a medium saucepan on medium heat. Cook 5-7 mins or until simmering. Strain into a medium bowl. Cool slightly.
- Whisk eggs in a large bowl. Gradually whisk in hot milk mixture.
- Layer bread and bananas alternately and slightly overlapping in prepared dish. Pour egg mixture over top. Sprinkle with sugar. Place in a large roasting pan. Add enough boiling water to come halfway up sides of baking dish.
- Bake for 45-50 mins or until a knife inserted into center comes out clean. Remove bread pudding from roasting pan. Cool for 5 mins before serving.
