Banana And Irish Cream Bread Pudding

  1. Preheat the oven to 350u0b0F. Lightly grease a 2-quart baking dish.
  2. Place cream, milk, Irish cream, honey, cinnamon stick, vanilla bean and seeds in a medium saucepan on medium heat. Cook 5-7 mins or until simmering. Strain into a medium bowl. Cool slightly.
  3. Whisk eggs in a large bowl. Gradually whisk in hot milk mixture.
  4. Layer bread and bananas alternately and slightly overlapping in prepared dish. Pour egg mixture over top. Sprinkle with sugar. Place in a large roasting pan. Add enough boiling water to come halfway up sides of baking dish.
  5. Bake for 45-50 mins or until a knife inserted into center comes out clean. Remove bread pudding from roasting pan. Cool for 5 mins before serving.
