Balsamic Chicken And Vegetables
- 2 tbsp balsamic vinegar
- 1 tbsp brown sugar
- 2 tsp vegetable or olive oil
- 8 None chicken thighs
- 6 None parsnips, peeled and quartered lengthwise
- 4 None tomatoes, halved
- 1/2 cup grated Cheddar cheese
- 7 oz green beans, halved diagonally
- 2 tbsp chopped basil, plus additional small leaves, to serve
- Preheat the oven to 425u0b0F. Combine vinegar and sugar in a small bowl; stir until sugar dissolves.
- Place chicken, parsnip and vinegar mixture in a roasting pan; toss to coat. Season. Bake for 20 mins. Add tomato, cut-side up, to dish. Sprinkle tomato with cheese. Bake for 10 mins more or until chicken and vegetables are golden and cooked through.
- Meanwhile, microwave beans on high (100%) for 2 mins or until just tender. Add basil and remaining oil; toss to combine. Season. Divide chicken, vegetables and beans among plates. Serve sprinkled with basil leaves.
