Beef And Bean Tortillas
- 1 tbsp oil
- 1 None onion, chopped
- 7 oz ground beef
- 1 tsp ground cumin
- 1 tsp chili powder
- 1 can (14 oz) diced tomatoes
- 1 can (15 oz) kidney beans, drained and rinsed
- 8 None flour tortillas
- 1/4 cup grated Cheddar cheese
- 2 tbsp sour cream
- 1 can (11 oz) whole kernel corn
- 2 None green onions, thinly sliced
- Heat oil in a large saucepan on medium heat. Saute onion for 3-4 mins, until tender. Add ground beef and cook for 4-5 mins, until well browned. Stir in spices and cook for 30 seconds. Blend in tomatoes and beans. Reduce heat to low. Simmer, covered, for 10-15 mins, until thickened.
- Place 4 tortillas on work surface. Divide beef mixture evenly among them. Sprinkle with a little cheese. Top with a second tortilla.
- Heat a large nonstick skillet on medium-high heat. Cook tortilla stacks for 1 min each side, pressing down lightly, until crisp and golden.
- Cut into wedges. Top with sour cream and a spoonful of combined corn and green onion.
