Asian Style Cabbage Rolls With Beef
- 1 tbsp peanut oil
- 1/2 lb ground beef
- 1 None red onion, finely sliced
- 2 clove garlic, crushed
- 1 inch piece ginger, peeled, grated
- 2 cups cooked white rice
- 2 tbsp thick sweet soy sauce
- 8 oz can pineapple pieces, drained
- 1 None Chinese cabbage, leaves separated, trimmed and blanched
- 1 None cucumber, cut into strips
- 1 None carrot, cut into thin sticks
- None None sweet chili sauce, to serve
- For the filling, heat oil in a wok or large frying pan on high. Stir-fry beef 2-3 mins, breaking up with a wooden spoon. Add onion, garlic and ginger to wok, stir-frying, 1 min. Add rice and soy sauce, tossing to coat. Remove from heat and add pineapple.
- To assemble the rolls, lay cabbage leaves flat. Trim base of stem in a 'V' shape. Spoon 1/4 cup of filling across base of each cabbage leaf, above cut. Top with a strip of cucumber and carrot. Fold sides in and roll up to enclose. Repeat with remaining ingredients. Serve warm with sweet chilli sauce.
