Thai-Style Chicken Burger

  1. Combine soy sauce, lime peel and juice, garlic, ginger and chili pepper in a shallow dish. Flatten chicken between 2 pieces of parchment paper with a rolling pin. Place in dish; turn to coat with marinade. Cover and refrigerate for at least 30 mins.
  2. Heat a large nonstick skillet on medium heat. Spray with no stick cooking spray. Cook chicken for 4-5 mins each side, until golden and cooked through.
  3. Place a piece of chicken on bottom half of each bun. Spoon 1 tsp each cream cheese and sweet chili sauce on each. Top with salad greens, carrot, cucumber, cilantro and bun tops. Serve with fries, if desired.
