Frosted Pineapple Squares

  1. Combine first 5 ingredients in heavy saucepan.
  2. Cook over medium heat.
  3. Stir constantly until thick and smooth; set aside to cool.
  4. Scald milk and add sugar.
  5. Set aside to cool.
  6. Mix yeast and warm water; let it sit for a few minutes.
  7. Cut butter into flour and add eggs.
  8. Combine flour, yeast and milk mixtures. Dough will be moist.
  9. Divide in half.
  10. Roll each half out on a floured surface to fit the bottom of a jelly roll pan.
  11. Spread cooled pineapple filling and cover with second half.
  12. Seal edges; snip surface of dough to let steam escape.
  13. Cover with clean towel and let rise in a warm place for about one hour.
  14. Bake at 375u0b0 for 35 to 40 minutes.
  15. Frost with confectioners sugar frosting.
  16. May want to use 2 cans of canned pie filling or substitute other canned fruit or fresh fruit or pineapple.
