Beef Rogan Josh
- 3/4 cup plain yogurt
- 2 inches fresh ginger, peeled, grated
- 4 cloves garlic, minced
- 1 tsp turmeric
- 1/2 tsp ground coriander
- 2 1/4 lb beef stew meat, diced
- 4 None red onions, thinly sliced
- 2 None red bell peppers, deseeded, thinly sliced
- 1 oz fresh cilantro, leaves picked, stems chopped
- 2 None large red chilies, deseeded
- 4 1/2 tbsp butter (or ghee)
- 2 tbsp garam masala
- 1 tbsp paprika
- 2 (13.5 oz) cans chopped tomatoes
- 1/2 cup beef stock
- 9 oz baby spinach
- None None steamed rice, to serve
- None None lemon wedges, to serve
- None None papadums, to serve
- Combine yogurt, ginger, garlic, turmeric and ground coriander. Add beef and toss to coat. Chill, covered, for 1 hour.
- Meanwhile, process 1 onion, 1 pepper, cilantro stems and chilies in a food processor until smooth.
- Melt butter in a large saucepan over high heat. Saute remaining onions and pepper along with garam masala and cilantro leaves for 2-3 mins, until golden. Reduce heat to low, add yogurt marinade, onion-pepper paste and paprika. Cook, stirring, for 5 mins. Add tomatoes, stock and beef. Bring to a boil, season then simmer, partially covered, for 1 hour 30 mins, until meat is very tender.
- Fold in spinach. Serve with rice, lemon wedges and papadums.
