Moroccan Fish With Couscous
- 1 cup couscous
- 1/4 cup slivered almonds, toasted
- 1/2 small red onion, finely chopped
- 1 tbsp lemon juice
- 1/4 cup chopped cilantro, plus extra leaves, to serve
- 2 tsp vegetable or olive oil
- 1 1/2 tbsp Moroccan seasoning
- 1 tsp grated lemon peel
- 4 None firm white fish fillets (6 oz each)
- 1/4 cup plain yogurt, to serve
- Place couscous in a medium heatproof bowl; stir in 1 cup boiling water. Cover with plastic wrap. Let stand for 5 mins or until liquid is absorbed. Using a fork, fluff and separate grains. Stir in nuts, onion, lemon juice, cilantro and 1 tsp of the oil.
- Meanwhile, combine seasoning, lemon peel and remaining 1 tsp oil in a small bowl. Rub spice mixture over fish. Heat a large nonstick skillet on medium heat. Add fish to pan; cook for 2-3 mins each side or until browned and cooked through.
- Spoon couscous onto plates. Top with fish. Serve at once with yogurt and cilantro leaves.
