Asparagus, Snow Pea And Almond Salad

  1. Bring a large saucepan of salted water to a boil on high heat. Meanwhile, toast the almonds in a small skillet on medium-high heat until lightly golden, tossing.
  2. Blanch asparagus in boiling water for 2 mins, then add snow peas. Cook for 1 min. Drain, and plunge asparagus and snow peas into bowl of iced water to set color and stop cooking process. Drain well. Place on a serving platter.
  3. For the dressing, whisk oil, vinegar and garlic in small bowl. Season with salt and pepper to taste. Drizzle dressing over vegetables and sprinkle with toasted almonds.
