Thai Turkey Fried Rice
- 2 tbsp peanut oil
- 1 None red onion, chopped
- 1 tbsp brown sugar
- 2 None long green chilies, seeded, finely chopped
- 2 cloves garlic, minced
- 2 tsp grated fresh ginger
- 1 None red pepper, seeded, diced
- 1/4 lb runner beans, trimmed, sliced
- 4 None kaffir lime leaves, thinly sliced
- 9 oz jasmine rice, cooked, cooled
- 1 lb cooked turkey meat, roughly chopped
- 2 tbsp fish sauce
- 2 tbsp teriyaki sauce
- 1/3 cup fresh Thai basil leaves, plus extra for garnish
- None None lime wedges, to serve
- Heat oil in a wok or large frying pan over high heat. Stir-fry onion for 2-3 mins, until tender. Add sugar, chilies, garlic and ginger. Stir-fry for 1 min, or until mixture is fragrant and sugar has dissolved. Add pepper, beans and lime leaves. Stir-fry for 1-2 mins, or until vegetables are just tender. Mix in rice, turkey, fish sauce and teriyaki sauce. Stir-fry for 2-3 mins, until heated through. Stir in basil.
- Spoon into serving bowls and sprinkle with extra basil leaves. Serve with lime wedges.
