Crunchy Wasabi Crusted Fish Fillets
- 4 (7 oz) white fish fillets
- 2 tbsp mayonnaise
- 2 tsp wasabi
- 1/4 cup breadcrumbs
- -1 None Red Cabbage Coleslaw
- 2 tbsp rice vinegar
- 2 tsp vegetable oil
- 1 tsp sugar
- 1/2 tsp mustard powder
- 10.5 oz cabbage, shredded finely
- 1 None Persian cucumber, seeded, sliced thinly
- 4 None spring onions, sliced thinly
- Preheat oven to 425u0b0F. Oil a baking tray and line with parchment paper.
- Place fish on prepared tray. Combine mayonnaise and wasabi then spread over fish. Press fish into breadcrumbs to coat then drizzle with oil. Roast for 15 mins, or until cooked to your liking.
- Meanwhile, to make the red cabbage coleslaw, whisk vinegar, oil, sugar and mustard in a medium bowl. Add cabbage, cucumber and spring onions. Serve with fish.
