Grilled Chicken With Fava Beans And Chive Butter
- 1 1/2 lbs fresh fava beans, removed from pods (or 1 cup frozen fava beans)
- 1 tbsp olive oil
- 1 None red onion, thinly sliced
- 2 cloves garlic, crushed
- 2 None beefsteak tomatoes, finely chopped
- 2 tbsp finely chopped fresh flat-leaf parsley
- 4 small boneless skinless chicken breasts
- 4 tbsp (1/2 stick) butter, softened
- 2 tbsp finely snipped fresh chives
- Boil, steam or microwave fava beans until tender; cool. Remove grey skins.
- Heat oil in medium skillet on low heat. Cook onion, covered, until very soft and starting to caramelize. Add garlic and beans; stir until heated through. Stir in tomato and parsley; cook 5 mins. Season to taste.
- Heat an oiled grill pan on high heat or preheat the grill to medium-high. Cook chicken 5-7 mins or until cooked through. Transfer to plate. Let stand, loosely covered with foil, 5 mins.
- Combine butter and chives in small bowl.
- Serve chicken on bean mixture; top with chive butter.
