Cauliflower Fritter Sandwiches With Halloumi And Lime Emulsion

- 8 oz cooked cauliflower florets, chopped
- 2 None large eggs, lightly beaten
- 2 tbsp flour
- 1 tsp baking powder
- 3 tbsp chopped spring onion
- 2 tbsp chopped fresh cilantro leaves
- 2 tbsp canola oil
- None None Fried Halloumi
- 4 (3.5-5 oz) slices halloumi cheese
- 1 tbsp flour
- None None Lime Emulsion
- 2 None large soft-boiled eggs, peeled
- 2 None limes, zested, juiced
- 4 tbsp vegetable stock, plus extra if needed
- 1/2 cup grapeseed oil
- None None To Serve
- 12 inch soft baguette, sliced horizontally
- 6 springs fresh cilantro
- 1/2 None avocado, peeled, pitted, sliced
- 1 None lime, cut into wedges
- To make the cauliflower fritters, mix cauliflower, eggs, flour, baking powder together. Mix in spring onion and herbs until combined. Season.
- Heat oil in a large frying pan over medium-high heat. Fry spoonfuls of cauliflower batter until golden brown. Drain on paper towels and season.
- Lightly coat halloumi with flour then fry until golden brown. Drain on paper towels.
- For the lime emulsion, combine eggs, lime zest, 1/2 the lime juice, and stock in a food processor and puree for 30 seconds. With the motor running, very slowly drizzle in oil until emulsified. Add more lime juice and stock, if necessary to thin. Season to taste.
- Coat baguette base with lime emulsion. Stuff with fritters, cilantro and avocado. Cut in 1/2. Serve with lime wedges.
