Apple Bacon Salad

  1. Prepare rice according to directions on package.
  2. Meanwhile, heat water to boiling in a medium saucepan.
  3. Add green beans and cook 2 minutes over high heat.
  4. Add broccoli and cook 1 to 2 minutes more, until vegetables are tender crisp.
  5. Drain and rinse under cold water.
  6. In medium skillet, heat oil over medium-high heat.
  7. Add garlic and cook 30 seconds, then add chicken and cook, stirring frequently, 3 to 4 minutes until chicken is no longer pink.
  8. Remove from heat and add soy sauce, orange zest, orange juice and honey; toss to coat chicken.
  9. In large bowl, combine cooked rice, broccoli, green beans and chicken mixture.
  10. Stir in carrots, red pepper and green onions; toss to coat.
  11. Serve warm or at room temperature.
