Pecan And Date Pudding With Caramel Sauce

  1. Preheat the oven to 350u0b0F. Grease a 2-quart baking dish.
  2. Combine the flour, baking powder, brown sugar, butter, milk, dates and pecans in a large bowl. Spread in the prepared dish.
  3. For the caramel sauce, combine 1 3/4 cups boiling water, brown sugar and butter in a medium bowl and stir until the sugar has dissolved.
  4. Pour the caramel sauce slowly over the back of a spoon onto the mixture in the dish.
  5. Bake for about 45 mins or until the surface is firm. Let stand for 2 mins before serving. Sprinkle with additional pecans and brown sugar.
