Pecan And Date Pudding With Caramel Sauce
- 1 cup self-rising flour
- 1/2 tsp baking powder
- 1/2 cup firmly packed brown sugar, plus additional, to serve
- 2 tbsp butter, melted
- 1/2 cup milk
- 1/2 cup finely chopped seedless dates
- 1/2 cup finely chopped pecans, plus additional, to serve
- None None FOR THE CARAMEL SAUCE
- 1/2 cup firmly packed brown sugar
- 3 tbsp butter, chopped
- Preheat the oven to 350u0b0F. Grease a 2-quart baking dish.
- Combine the flour, baking powder, brown sugar, butter, milk, dates and pecans in a large bowl. Spread in the prepared dish.
- For the caramel sauce, combine 1 3/4 cups boiling water, brown sugar and butter in a medium bowl and stir until the sugar has dissolved.
- Pour the caramel sauce slowly over the back of a spoon onto the mixture in the dish.
- Bake for about 45 mins or until the surface is firm. Let stand for 2 mins before serving. Sprinkle with additional pecans and brown sugar.
