Fig And Ginger Cake
- 12 tbsp (1 1/2 sticks) butter, softened
- 3/4 cup granulated sugar
- 3 None eggs
- 1/2 cup coarsely chopped glace figs
- 1/2 cup glace ginger, coarsely chopped
- 1/2 cup coarsely chopped walnuts
- 1/2 cup flour
- 1/2 cup self-rising flour
- 1/3 cup sour cream
- None None Powdered sugar, for dusting
- Preheat the oven to 300u0b0F. Grease an 8 x 4-inch loaf pan; line bottom and long sides with parchment paper, extending paper 2 inches above sides of pan.
- Beat butter and sugar in a large bowl with an electric mixer until light and fluffy. Add eggs, one at a time, beating well after each addition. Stir in figs, ginger and walnuts; mix well. Stir in sifted flours and sour cream; mix well. Spoon into prepared pan.
- Bake cake about 1 hour or until toothpick inserted into center comes out clean. Cool in pan 10 mins. Remove from pan; cool completely on wire rack. Dust with sifted powdered sugar.
