Lebanese Tuna Salad

  1. Preheat the oven to 350u0b0F. Brush both sides of bread with a little of the oil. Place bread on a baking pan. Bake 5 mins each side, or until golden and crisp. Set aside to cool.
  2. Mix tuna, chickpeas, tomatoes, cucumber, onion, mint, parsley and lemon peel in a large bowl. Whisk lemon juice and remaining oil in a small bowl. Season. Drizzle over salad. Toss to combine.
  3. Break bread into pieces. Add to salad; toss to combine. Serve with lemon wedges.
