Chocolate Pudding Cakes

  1. Preheat the oven to 350u0b0F. Lightly grease six 1-cup ramekins or a 1 1/2-quart baking dish.
  2. Beat butter and granulated sugar in a large bowl with an electric mixer until light and fluffy. Beat in vanilla. Add eggs, one at a lime, beating well after each addition.
  3. Sift flour and coffee powder. Fold into mixture with milk. Stir in melted chocolate. Spoon evenly into ramekins (or baking dish).
  4. Whisk 1 cup boiling water, brown sugar and cocoa powder in a medium bowl. Pour evenly into each ramekin.
  5. Bake for 15-20 mins until puffed and firm. Let stand 2 mins before unmolding onto serving plates. Serve with ice cream or whipped cream.
