Coffee Walnut Rolls
- 2 1/4 cups self-rising flour
- 2 tbsp granulated sugar
- 3 tbsp cold butter, chopped
- 1 cup milk
- 3 tbsp butter, melted
- 1/3 cup firmly packed brown sugar
- 1/2 tsp ground cinnamon
- None None FOR THE ICING
- 1 tbsp instant coffee dissolved in 2 tbsp warm water
- 1 tbsp sour cream
- 2 cups powdered sugar, sifted
- 1/2 cup chopped walnuts, to sprinkle
- Preheat the oven to 350u0b0F. Line a baking pan with parchment paper.
- Sift flour and a pinch of salt into a large bowl. Stir in sugar. Using your fingertips, rub in butter. Pour in the milk. Using a spatula, bring the dough together using a cutting motion.
- Turn dough onto a floured surface. Roll out to a 12 x 8-inch rectangle.
- Combine melted butter, brown sugar and cinnamon in a small bowl. Sprinkle over the dough. Roll up dough from the long side. Cut into 6 pieces. Place one roll on the prepared pan and then place the remaining rolls around it so that they just touch.
- Bake for 15-20 mins. Cool slightly. For the icing, combine coffee mixture, sour cream and powdered sugar in a medium bowl. Drizzle over warm rolls and sprinkle with chopped walnuts.
