Individual Tuna Noodle Casseroles
- 1 tsp vegetable or olive oil
- 1 None onion, chopped
- 2 cloves garlic, minced
- 14 oz frozen mixed vegetables
- 2 (13.5 oz) cans cherry tomatoes
- 1 (15 oz) can tuna in spring water, drained, flaked
- 12 oz pasta shells
- 1/3 cup light mozzarella cheese, grated
- 3 tbsp fresh flat-leaf parsley, finely chopped
- Preheat oven to 400u0b0F.
- Heat oil in a frying pan over medium heat. Sweat onion for 5 mins, until soft. Add garlic and cook for 30 seconds, or until fragrant. Add vegetables, tomatoes and tuna. Bring to a boil then remove from heat. Season.
- Meanwhile, cook pasta in boiling salted water for 8 mins or until almost tender. Drain. Toss with tuna mixture then distribute between 4 ramekins (17 oz each). Arrange on a baking tray and sprinkle with cheese and parsley. Bake for 20 mins, until golden and bubbling.
