Spring Vegetable Soup
- 4 tbsp olive oil
- 2 None medium onions, thinly sliced
- 1 head green cabbage, trimmed, thinly sliced
- 3 None carrots, trimmed, thinly sliced
- 3 None medium potatoes, peeled, sliced into strips
- 3.5 oz button mushrooms
- 3.5 oz shiitake mushrooms, sliced
- 4 cups vegetable stock
- 2-3 tbsp light soy sauce
- 4 tbsp creme fraiche
- 2 tbsp Asian chili sauce (such as Sambal Oelek)
- Heat olive oil in a saucepan over medium heat. Sweat onions for 2-3 mins, until translucent. Add cabbage, carrots, potatoes and mushrooms. Saute for 3-4 mins, stirring. Add stock and simmer for 8-10 mins. Add soy sauce and season.
- Distribute soup between 4 serving bowls. Add 1 tbsp creme fraiche and some chili sauce to each bowl. Serve.
