Spring Vegetable Soup

  1. Heat olive oil in a saucepan over medium heat. Sweat onions for 2-3 mins, until translucent. Add cabbage, carrots, potatoes and mushrooms. Saute for 3-4 mins, stirring. Add stock and simmer for 8-10 mins. Add soy sauce and season.
  2. Distribute soup between 4 serving bowls. Add 1 tbsp creme fraiche and some chili sauce to each bowl. Serve.
