Spicy Chicken And Couscous
- 2 tbsp olive oil
- 8 None boneless skinless chicken thighs, cut into thirds
- 1 large onion, sliced
- 1 large red pepper, seeded and sliced
- 2 None chorizo, halved, sliced
- 1 None long red chili pepper, finely chopped
- 2 tsp smoked paprika
- 1/2 tsp ground cumin
- 1/2 tsp ground coriander
- 1/2 tsp cayenne pepper
- 1 can (28 oz) whole tomatoes, coarsely chopped
- 1 cup chicken stock
- None None Couscous, steamed green beans, plain yogurt, cilantro leaves, to serve
- Preheat the oven to 325u0b0F
- Heat 1 tbsp of the olive oil in large ovenproof skillet on high heat. Brown chicken in two batches. Transfer to a plate.
- Heat remaining 1 tbsp oil in same pan on medium-high heat. Saute onion and pepper for 4-5 mins, until tender. Add chorizo and chili pepper. Cook for 3-4 mins, until chorizo is crisp. Add spices, cook, stirring for 30 seconds, until fragrant. Add tomatoes and stock. Bring to a boil. Return chicken to skillet. Cover.
- Bake for 40-45 mins. Serve with couscous, steamed green beans, yogurt and cilantro leaves.
