Spicy Chicken And Couscous

  1. Preheat the oven to 325u0b0F
  2. Heat 1 tbsp of the olive oil in large ovenproof skillet on high heat. Brown chicken in two batches. Transfer to a plate.
  3. Heat remaining 1 tbsp oil in same pan on medium-high heat. Saute onion and pepper for 4-5 mins, until tender. Add chorizo and chili pepper. Cook for 3-4 mins, until chorizo is crisp. Add spices, cook, stirring for 30 seconds, until fragrant. Add tomatoes and stock. Bring to a boil. Return chicken to skillet. Cover.
  4. Bake for 40-45 mins. Serve with couscous, steamed green beans, yogurt and cilantro leaves.
