Banana Nut Cake(Bread)
- 2 1/4 c. sifted flour
- 1/4 tsp. baking soda
- 1/2 c. shortening
- 2 eggs (unbeaten)
- 1 tsp. vanilla
- 2 Tbsp. milk
- 2 tsp. baking powder
- 3/4 tsp. salt
- 1 c. sugar
- 1/2 c. chopped nuts
- 1 c. mashed bananas (ripe)
- Mix and sift flour, baking powder, soda and salt.
- Beat shortening until creamy.
- Add sugar gradually and continue beating until light and fluffy.
- Add eggs one at a time, beating after each addition until fluffy.
- Add nuts and beat well.
- Stir in vanilla.
- Add flour mixture and alternate with bananas and milk a small amount at a time, beating after each addition until smooth. Turn into a well-greased 8 x 8 x 2-inch cake pan.
- Bake at 350u0b0 until done, about 55 minutes.
