Braised Lamb Sausage And Beans
- 2 tsp vegetable or olive oil
- 1 lb thick lamb sausages
- 1 None Spanish onion, finely chopped
- 3 None carrots, chopped
- 2 None tomatoes, chopped
- 10.5 oz green beans, sliced
- 1 None chicken bouillon cube, crumbled
- 2 (13.5 oz) cans cannellini beans, rinsed
- 3 tbsp fresh flat-leaf parsley leaves, chopped
- None None crusty bread, to serve
- Heat oil in a deep frying pan over high heat. Cook sausages for 3 mins, or until browned. Add onion and carrot. Cook for 5 mins, or until soft. Add tomatoes, green beans, crumbled bouillon cube and 1 cup water. Bring to a boil then reduce heat and simmer, covered, for 5 mins, or until sausages are cooked. Add cannellini beans and cook for 2 mins, or until heated.
- Stir in parsley and season to taste. Serve with crusty bread.
