Chicken And Bell Pepper Cakes
- 1/2 cup oil + 1 tbsp
- 2/3 lb chicken breast, cut into small cubes
- 1 None red bell pepper, deseeded and cut into strips
- 1 pinch paprika
- 3/4 cup yogurt
- 4 sprigs fresh tarragon, finely chopped
- 1 None egg
- 1 1/2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1 tsp curry powder
- Heat 1 tbsp oil in a pan and sear the chicken for 3-4 mins, turning. Add the strips of pepper and saute for another 2 mins. Add the paprika, season to taste then remove from the pan.
- Preheat the oven to 325u0b0F. Grease and flour a 10 inch cake pan. Mix the yogurt, remaining oil, tarragon and egg. In a separate bowl, mix the flour, baking powder, salt and curry powder. Combine the flour and yogurt mixtures then stir in the chicken and bell pepper strips. Transfer the mixture to the prepared pan and bake for about 30 mins. Remove from the oven and cool in the pan on a wire rack.
