Savory Bread Puddings
- 1 tbsp vegetable oil
- 1 None medium onion, finely chopped
- 1 clove garlic, chopped
- 8 slices white bread, crust removed, cut into 3/4 inch pieces
- 3.5 oz pizza cheese, grated
- 3 None eggs
- 3/4 cup milk
- 2 oz fresh ricotta cheese
- 1 tbsp fresh chives, chopped
- 8 None cherry tomatoes, quartered
- Preheat oven to 350u0b0F. Grease 4 - 8 oz ramekins then place on a baking tray.
- Heat oil in a small frying pan over medium heat. Add onion and garlic and cook for 1-2 mins, stirring occasionally, until onions are translucent. Combine with bread and pizza cheese then distribute between prepared ramekins.
- Whisk together eggs, milk, ricotta and chives. Season then distribute between ramekins. Set aside for 15 mins to soak. Arrange tomatoes over top and bake for 30-35 mins, or until just set. Allow to cool slightly before serving.
