Almond Muffins With Caramelized Pear

- 2 tbsp butter
- 1/4 cup brown sugar
- 1 None pear, peeled, cored, quartered, thinly sliced
- None None Almond Muffins
- 1/4 cup self-rising flour, sifted
- 2 tsp ground cinnamon
- 3/4 cup ground almonds
- 1/3 cup blanched almonds, toasted, chopped
- 1/2 cup sugar
- 1/2 cup milk
- 1/2 cup butter, melted
- 2 None large eggs
- 1 tsp vanilla extract
- Preheat the oven to 350u0b0F. Lightly grease a 12-hole muffin pan.
- To make the caramelized pear, combine the butter and sugar in a large frying pan over a medium heat. Saute the pear for 4-5 mins, until just tender. Allow to cool to room temperature. Drain, reserving liquid.
- Sift the flour and cinnamon into a bowl. Stir in the ground almonds, blanched almonds and sugar.
- In a separate bowl, whisk together the milk, butter, eggs and vanilla.
- Make a well in the center of the dry ingredients. Add the milk mixture and stir to combine. Fold in half of the caramelized pears. Mix lightly until just combined (do not over-mix).
- Spoon the mixture evenly into the prepared pan. Top with the remaining pear.
- Bake for 20-25 mins, until a skewer inserted in the center of a muffin comes out clean. Transfer to a wire rack to cool. Serve drizzled with the reserved pear cooking liquid.
