Lamb Burgers With Tomato And Mint Salad
- 2 tbsp olive oil
- 1 None onion, peeled and finely chopped
- 2 cloves garlic, peeled and minced
- 3 tsp ground cumin
- 1 lb ground lamb
- 2 tbsp fresh parsley, chopped
- 1 None lemon, zested
- 4 None rolls, halved and toasted
- 1 None cucumber, peeled into ribbons
- 2 oz baby romaine, finely shredded
- None None Greek yogurt, to serve
- 1 None large tomato, finely chopped
- 2 tbsp fresh mint, finely chopped + extra leaves, to garnish
- In a large frying pan, heat 1 tbsp oil over medium heat and saute onion and garlic for 3-4 mins, until tender. Add cumin and cook for 1 min. Set aside to cool.
- Combine lamb, onion mixture, parsley and lemon zest. Season then form into 4 patties. Heat a heavy-bottomed saucepan over medium heat and brush with remaining oil. Cook patties for 4-5 mins per side, until browned and cooked through. Drain on paper towels.
- Place patties on halved rolls with cucumber and baby romaine. Top with yogurt and mint leaves. Combine chopped tomato and mint and serve alongside burgers.
