Chocolate Cherry Cakes With White Chocolate Truffles
- 2/3 cup butter
- 7 oz dark chocolate, broken into pieces
- 3 None eggs
- 3/4 cup granulated sugar
- 2 1/4 cup all-purpose flour
- 1/2 cup desiccated coconut
- 2 tbsp baking powder
- 1/2 cup 2% or whole milk
- 2 - 10 oz jar cherries, drained
- 20 None white chocolate truffels
- None None whipped cream, to serve (optional)
- None None coconut flakes, to serve (optional)
- Preheat oven to 350u0b0F. Grease and flour 10 - 5 oz mini loaf pans. Gently melt butter and chocolate together in a pan. Remove from heat and set aside. Whisk eggs and sugar then add chocolate mixture. Mix flour, coconut and baking powder. Fold in, alternating with milk, until smooth. Fold in cherries. Transfer to prepared pans and add 2 bonbons to each loaf. Press in gently to cover with batter. Bake for 35 mins.
- Remove cakes from oven, let cool in pan for 20 mins then remove and place on a wire rack to cool completely. Serve topped with whipped cream and coconut flakes, if desired.
