Beef With Mixed Mushrooms

  1. Heat half the peanut oil in a wok on high heat. Stir-fry the beef, in batches, until browned. Remove from the wok.
  2. Heat the remaining peanut oil in the wok. Stir-fry the onion until softened. Add the garlic, ginger, chili pepper and mushrooms; stir-fry until the mushrooms are tender.
  3. Meanwhile, place the noodles in a large heatproof bowl; cover with boiling water. Separate with a fork; drain.
  4. Return the beef to the wok with the noodles and remaining ingredients; stir-fry until heated through. Season to taste.
