Beef With Mixed Mushrooms
- 1/4 cup peanut oil
- 1 1/2 lbs beef sirloin steak, thinly sliced
- 1 None onion, thickly sliced
- 2 cloves garlic, crushed
- 1 piece (3/4 inch) fresh ginger, grated
- 2 None fresh long red chili peppers, thinly sliced
- 5 oz oyster mushrooms, halved
- 4 oz fresh shiitake mushrooms, halved
- 4 oz enoki mushrooms
- 1 lb Chinese egg noodles
- 6 None green onions, thickly sliced
- 1/4 cup oyster sauce
- 1 tbsp kecap manis (thick sweet soy sauce)
- 1 tsp sesame oil
- Heat half the peanut oil in a wok on high heat. Stir-fry the beef, in batches, until browned. Remove from the wok.
- Heat the remaining peanut oil in the wok. Stir-fry the onion until softened. Add the garlic, ginger, chili pepper and mushrooms; stir-fry until the mushrooms are tender.
- Meanwhile, place the noodles in a large heatproof bowl; cover with boiling water. Separate with a fork; drain.
- Return the beef to the wok with the noodles and remaining ingredients; stir-fry until heated through. Season to taste.
