Salmon And Spinach Pasta Bake

  1. Preheat the oven to 400u0b0F. Lightly grease a 2-quart baking dish.
  2. Cook the pasta in a large saucepan of boiling, salted water according to package directions. Drain and return to pan.
  3. Meanwhile, heat the oil in a large skillet on high heat. Saute the onion and garlic for 2-3 mins until tender. Add the spinach. Cook, stirring, for 2-3 mins until wilted.
  4. Add the spinach mixture, salmon, cream, lemon peel and juice, and red pepper flakes to the pasta. Combine the cheeses in a bowl and add half to the salmon mixture. Toss to mix well.
  5. Spoon the salmon mixture into the prepared dish. Sprinkle evenly with the remaining cheese.
  6. Bake for 30-35 mins until golden and bubbly. Serve with green salad.
