Chorizo And Thyme Farfalle
- 400 g farfalle pasta
- 2 tbsp olive oil
- 150 g chorizo, sliced
- 1 None courgette, quartered lengthways and sliced
- 2 cloves garlic, peeled and crushed
- 8 sprigs fresh thyme, leaves stripped from stems, plus extra for garnish
- 125 ml red wine
- 350 g tub ready-made tomato and garlic pasta sauce
- 100 ml whipping cream
- 20 g pitted black olives, sliced
- Cook the pasta in boiling salted water according to the package instructions. Heat the oil in a separate saucepan and fry the chorizo, turning, until browned. Add the zucchini and garlic and cook for 1 min. Season with black pepper. Add the thyme, wine, tomato sauce, cream, olives and a pinch of sugar and bring to a boil. Simmer for 5 mins. Drain the pasta and toss with the sauce. Serve garnished with thyme.
