Garlic Spaghetti With Fresh Tomato Sauce
- 2 1/4 lb ripe tomatoes
- 4 tbsp olive oil
- 4 cloves garlic, 1 minced, 3 finely sliced
- 2 None onions, finely chopped
- 1/2 tsp granulated sugar
- 18 oz spaghetti
- 3 sprigs fresh basil, leaves finely chopped, a few leaves reserved to garnish
- 4 tbsp cream cheese
- None None fresh oregano sprigs, to garnish
- Cut a cross in the bottom of each tomato. Blanch in boiling water for 3-5 mins the drain. Set aside until cool enough to handle. Peel skin and chop.
- Heat 1 tbsp oil in a saucepan. Add minced garlic and 1 onion. Cook, stirring, for 3-5 mins. Add sugar. Cook, stirring, for 1 min. Add tomatoes, cover and simmer for 15 mins. Season.
- Meanwhile, cook pasta in boiling salted water until al dente. Drain.
- Heat remaining oil in a large frying pan. Saute sliced garlic until golden. Add spaghetti and chopped basil and toss to combine. Serve with tomato sauce and a spoonful of cream cheese. Garnish with reserved basil leaves and oregano.
