Garlic Spaghetti With Fresh Tomato Sauce

  1. Cut a cross in the bottom of each tomato. Blanch in boiling water for 3-5 mins the drain. Set aside until cool enough to handle. Peel skin and chop.
  2. Heat 1 tbsp oil in a saucepan. Add minced garlic and 1 onion. Cook, stirring, for 3-5 mins. Add sugar. Cook, stirring, for 1 min. Add tomatoes, cover and simmer for 15 mins. Season.
  3. Meanwhile, cook pasta in boiling salted water until al dente. Drain.
  4. Heat remaining oil in a large frying pan. Saute sliced garlic until golden. Add spaghetti and chopped basil and toss to combine. Serve with tomato sauce and a spoonful of cream cheese. Garnish with reserved basil leaves and oregano.
