Salt And Pepper Squid
- 1 tbsp rice flour
- 1 tsp cracked black pepper
- 1 tsp sea salt
- 1/2 tsp dried chili flakes
- 1 (10.5 oz) squid, cleaned, scored, cut into 1 1/2 inch pieces
- None None vegetable oil, to deep-fry
- 1 oz mixed Asian greens
- 1/2 None avocado, sliced
- 1 None small cucumber, halved lengthwise, sliced
- 1/2 None small red pepper, thinly sliced
- 2 tbsp French dressing
- None None lemon wedges, to serve
- Combine rice flour, pepper, salt and chili. Toss squid lightly in flour mixture, shaking off excess. Heat oil over medium-high heat. Deep-fry squid for 2 mins, or until curled and light golden brown. Drain on paper towels.
- Meanwhile, toss mixed greens, avocado, cucumber and red pepper with dressing. Distribute between serving plates and top with squid. Serve with lemon wedges.
