Vanilla Pavlova With Mixed Berries And Passionfruit
- 4 None egg whites
- 3/4 cup granulated sugar
- 1 tsp lemon juice
- 1/2 tsp vanilla extract
- 1 1/4 cups heavy cream, whipped
- 8.75 oz strawberries, hulled, sliced
- 4.5 oz blueberries
- 4.5 oz raspberries
- 4 None passionfruit, pulp removed
- Preheat oven to 300u0b0F. Line a baking tray with parchment paper.
- Whip egg whites to soft peaks. Gradually add sugar, 1 tbsp at a time, beating until sugar dissolves and meringue is stiff, thick and glossy. Beat in lemon juice and vanilla extract. Transfer to prepared tray and shape into a round with a slight recess in the middle. Bake for 20 mins. Reduce heat to 250u0b0F and bake for another 45 mins. Turn off oven. Let cool in oven with door ajar.
- To serve, top with whipped cream and berries. Drizzle with passionfruit just before serving.
