Summer Veggie Fried Cauliflower Rice

  1. In a large skillet over medium heat, cook onion, snow peas, carrot and asparagus in oil for 5 mins or until tender, but still bright green.
  2. Increase the heat to medium high, add cauliflower, scallion and chicken broth. Cook while stirring occasionally, for 6 mins.
  3. Stir in vinegar and parsley. Season to taste with salt and pepper. Can be served warm or cold.
