Summer Veggie Fried Cauliflower Rice
- 2 tbsp olive oil
- 1 None small onion, minced
- 1 cup sliced fresh snow peas
- 1/4 cup grated carrot
- 1 cup sliced fresh asparagus
- 1 head cauliflower, grated (about 6 cups)
- 1/4 cup scallion
- 4 tbsp chicken broth
- 1-2 tbsp seasoned rice wine vinegar, like Nakano
- 2 tbsp chopped fresh parsley
- None None sauteed diced yellow pepper for garnish
- In a large skillet over medium heat, cook onion, snow peas, carrot and asparagus in oil for 5 mins or until tender, but still bright green.
- Increase the heat to medium high, add cauliflower, scallion and chicken broth. Cook while stirring occasionally, for 6 mins.
- Stir in vinegar and parsley. Season to taste with salt and pepper. Can be served warm or cold.
