Prosciutto, Pea And Pasta Gratin
- 13 oz cavatappi or other short pasta
- 1 tsp cornstarch
- 1 1/4 cups light cream
- 1 tbsp butter
- 8 slices prosciutto, coarsely chopped
- 3/4 cup frozen peas, thawed
- 1 cup grated Parmesan cheese
- Cook pasta in a large saucepan of boiling, salted water according to package directions; drain. Return to pan.
- Preheat the broiler to high. Blend cornstarch and a little of the cream until smooth; stir in remaining cream.
- Melt butter in a large skillet on medium heat. Cook prosciutto, stirring, for 3 mins, or until lightly browned. Add cream mixture, peas and half the Parmesan cheese; cook, stirring, until sauce boils and thickens slightly. Pour sauce over hot pasta; toss to combine. Season to taste.
- Spoon pasta mixture into an oiled 2-quart baking dish; sprinkle with remaining Parmesan cheese. Broil for 8 mins, or until top is lightly browned.
