Chocolate Peanut Butter Cookies
- 6 oz milk chocolate, finely chopped
- 4 tbsp (1/2 stick) butter, chopped
- 1 1/4 cups flour
- 1/4 cup unsweetened cocoa powder
- 1/2 tsp baking powder
- 2 None eggs
- 3/4 cup granulated sugar
- 1/4 cup crunchy peanut butter
- 1/2 cup powdered sugar, sifted
- Preheat the oven to 325u0b0F. Line 3 baking sheets with parchment paper.
- Melt chocolate and butter in a small saucepan on low heat, stirring occasionally until melted
- Sift flour, cocoa powder and baking powder into a medium bowl.
- Beat eggs and sugar in a large bowl with an electric mixer until well combined. Gradually beat in chocolate mixture and peanut butter on low speed. Mix in dry ingredients until well combined. Let stand for 5 mins until firm.
- Roll tablespoons of mixture into balls. Press tops into powdered sugar. Place 1 1/2 inches apart on prepared pans. Flatten slightly.
- Bake 10-15 mins, until cracked and slightly firm on the outside. Cool on pans 5 mins. Remove from pans; cool completely on a wire rack.
