Banana Pancakes With Berry Smoothies
- 1 cup self-rising flour, sifted
- 1 tbsp granulated sugar
- 1 cup buttermilk
- 2 oz low-fat ricotta cheese
- 1 None egg
- 1 None banana, peeled, chopped, plus extra slices to serve
- None None Berry Smoothies
- 2 None frozen bananas, sliced
- 5 oz frozen mixed berries
- 3/4 cup frozen yogurt
- None None honey, to serve
- To make the pancakes, combine flour and sugar. Whisk together buttermilk, ricotta and egg then whisk into dry ingredients until smooth. Fold in chopped banana. Set aside for 15 mins.
- Heat a large, nonstick frying pan over medium heat. Lightly coat with oil. Working in 2 batches, pour 1/4 cup batter into pan. Cook for 2-3 mins, until bubbles appear on the surface and break open. Flip over and cook for 1-2 mins, until cooked through and golden.
- To make the berry smoothie, combine banana, berries and frozen yogurt in a blender. Puree until smooth.
- Serve pancakes with extra sliced banana, a drizzle of honey and berry smoothies.
