Apple Pecan Pie
- 1/4 c. butter
- 1/2 c. brown sugar
- 1/4 c. sugar
- 1 pkg. chopped pecans
- 4 apples, peeled and chopped
- 1/2 c. sugar
- 2 tsp. lemon flavoring
- 2 tsp. cinnamon
- 1 Tbsp. cornstarch
- 1/2 c. water
- Cook butter and sugars.
- Mix in pecans.
- Cook apple.
- Mix in sugar, lemon flavoring, cinnamon, cornstarch and water.
- Line pie pan with waxed paper.
- Pour pecan mixture in.
- Make a crust.
- Put on top of pecans.
- Put apple mixture on top of crust.
- Make another crust.
- Put on top of apples.
- Sprinkle top of crust with cinnamon/sugar.
- Put slits in pie crust.
- Bake about 25 minutes until golden brown.
- Let pie cool 15 minutes, then turn out onto platter.
- Top with Cool Whip or ice cream.
