Chicken And Avocado Sushi
- 2.5 oz sushi rice, rinsed, drained
- 2 tsp granulated sugar
- 2 tbsp rice wine vinegar
- 4 sheets nori seaweed
- 4 tsp mayonnaise
- 8 None baby lettuce leaves
- 3 oz rotisserie chicken, shredded
- 1/2 None avocado, peeled, pitted, sliced
- Bring rice and 2 cups cold water to a boil, stirring. Reduce heat, cover and simmer for 12 mins. Remove pan from heat and set aside, covered, for 10 mins. Spread over a baking tray. Combine sugar and vinegar and stir until sugar dissolves. Drizzle over rice then stir to coat. Cover with a damp tea towel and let cool.
- Place 1 sheet of nori, shiny-side down, on a flat work surface. Using damp hands, spread 1/4 of the rice mixture over nori, leaving a 2/3 inch border. Spread 1 tsp mayonnaise over top then arrange lettuce, chicken and avocado along center. Roll up tightly to enclose filling. Cut into pieces. Repeat with remaining ingredients.
