Guilt Free Caesar Salad

  1. Preheat oven to 350u0b0F. Lightly coat bread with olive oil then arrange on a baking tray. Bake for 8 mins, until toasted.
  2. Meanwhile, whisk together garlic, chicken stock, 1/2 the Parmesan, parsley, lemon juice, mustard and anchovies. Gradually whisk in oil until slightly thickened.
  3. Place lettuce in a serving bowl. Top with toasted bread and remaining Parmesan cheese. Just before serving, add dressing and toss to combine.
