Cherry Chocolate Cheesecake

  1. Grease 9-inch round springform pan. Process cookies until mixture resembles fine breadcrumbs. Add butter; process until just combined. Press mixture evenly over bottom of prepared pan. Cover; refrigerate for 30 mins, or until firm.
  2. Preheat the oven to 350u0b0F. Beat cream cheese and sugar in large bowl with electric mixer until smooth. Add eggs, one at a time, beating well between additions. Gradually beat in melted chocolate. Fold in chopped chocolate and cherries.
  3. Place springform pan on a baking pan. Spread cheesecake mixture into pan. Bake for 50 mins, or until set. Cool to room temperature. Cover; refrigerate for 3 hours or overnight.
  4. Serve cheesecake decorated with chocolate roses, if desired.
