Walnut Cake With Coffee Syrup
- 1/2 cup butter, chopped, softened
- 3/4 cup granulated sugar
- 1 None egg
- 2 tbsp almond liqueur
- 10 oz ground walnuts + extra, chopped, to serve
- 1/3 cup all-purpose flour, sifted
- 1/3 cup self-rising flour, sifted
- None None Coffee Syrup
- 1/2 cup espresso
- 1/4 cup sugar
- Preheat oven to 325u0b0F. Lightly grease and line an 8 inch round cake pan with parchment paper.
- Cream butter and sugar until light and fluffy. Add egg and liqueur. Fold in ground nuts and flour until just combined. Transfer to prepared pan, smooth top and bake for 45-50 mins, until a skewer inserted in the center comes out clean.
- Meanwhile, for coffee syrup, combine espresso and sugar. Stir over low heat until sugar dissolves. Bring to a boil, reduce heat and simmer for 3 mins.
- Remove cake from pan and place on a wire rack over a baking tray. Pour 1/2 of the hot syrup over hot cake. Let cool to room temperature. Sprinkle with walnuts and serve drizzled with remaining espresso syrup.
