Walnut Cake With Coffee Syrup

  1. Preheat oven to 325u0b0F. Lightly grease and line an 8 inch round cake pan with parchment paper.
  2. Cream butter and sugar until light and fluffy. Add egg and liqueur. Fold in ground nuts and flour until just combined. Transfer to prepared pan, smooth top and bake for 45-50 mins, until a skewer inserted in the center comes out clean.
  3. Meanwhile, for coffee syrup, combine espresso and sugar. Stir over low heat until sugar dissolves. Bring to a boil, reduce heat and simmer for 3 mins.
  4. Remove cake from pan and place on a wire rack over a baking tray. Pour 1/2 of the hot syrup over hot cake. Let cool to room temperature. Sprinkle with walnuts and serve drizzled with remaining espresso syrup.
