Honey-Mint Lamb Skewers With Tzatziki
- 2 tbsp fresh mint leaves, sliced, plus extra, to serve
- 4 cloves garlic, minced
- 1 tsp black peppercorns
- 1/2 tsp dried chili flakes
- 2 tbsp honey, plus extra to drizzle
- 1 tbsp olive oil
- 1 tbsp whole grain mustard
- 1 lb lamb loin, cubed
- None None Tzatziki
- 2 cups Greek yogurt
- 1 None Persian cucumber, deseeded, finely diced
- 1 None lemon, juiced
- 1 clove garlic, minced
- None None lemon wedges, to serve
- In a mortar and pestle, combine mint, garlic, peppercorns and chili flakes. Pound to a thick paste. Mix with honey, oil and mustard. Thread 4 cubes of lamb onto each of 16 soaked bamboo skewers. Transfer to a lined baking tray and coat with marinade. Cover and chill for 30 mins.
- Meanwhile, to make the tzatziki, combine all ingredients. Season. Cover and chill until required.
- Heat a large frying pan or grill plate over high heat. Cook skewers for 8-10 mins, turning, until cooked to your liking.
- Sprinkle extra mint over tzatziki. Drizzle extra honey over skewers and serve with tzatziki and lemon wedges.
