Asian Pork Wraps

  1. Place pork in a shallow dish. Whisk together hoisin sauce, ketchup and honey. Pour over pork and turn to coat. Chill for 1 hour, or overnight, to marinate.
  2. Preheat oven to 400u0b0F. Line a roasting pan with foil. Drain pork, reserving marinade. Transfer to prepared pan and roast for 15 mins. Carefully pour off excess fat and spoon marinade over pork. Increase heat to 450u0b0F and roast for 10-15 mins, until golden brown and cooked to your liking. Let cool then slice into strips.
  3. Distribute pork between tortillas. Top with spring onions and cucumber. Roll up. Serve with tomato wedges.
