Ginger And Fruit Tea Loaf

  1. Place the fruit in a large bowl and pour in the tea. Leave to soak for at least 2 hours, stirring occasionally.
  2. Preheat oven to 350u0b0F. Grease and line a 2 lb loaf pan with parchment paper. For the dough, add the remaining ingredients to the fruit and tea and mix well. Spoon into the prepared pan and brush the top with 1 tbsp cold water. Bake 50-60 mins, covering halfway through with foil if the top is browning too quickly. Cool in the pan 10 mins, then turn out onto a wire rack to cool completely before serving.
