Sesame And Orange Polenta Balls With Green Beans And Tomatoes
- 3 None oranges, zested and juiced
- 1 cup polenta
- 6 tbsp olive oil
- 3 tbsp sesame seeds, toasted
- 1 lb green beans
- 1/2 lb cherry tomatoes, halved
- 4 cloves garlic, finely chopped
- 1/2 bunch spring onions, sliced
- 1 bunch fresh sage, leaves picked
- For the polenta balls, combine orange juice with 2 cups water and 1 tsp salt and bring to a boil. Add polenta and simmer for 10 mins, stirring often. Remove from heat, add 1 tbsp olive oil, 2 tbsp sesame seeds, allow to cool then form into 20 equal-sized balls.
- Meanwhile, cook green beans in boiling water for 7-8 mins. Drain, run under cold water to cool then toss with tomatoes, garlic and spring onions.
- Heat 3 tbsp oil in a frying pan and fry sage until crispy then drain on paper towels. Add polenta balls to sage oil and cook over medium heat, turning regularly until brown all over. In a separate frying pan, heat 2 tbsp olive oil and saute tomatoes, garlic, spring onions and cooked beans then season. Serve with polenta balls. Sprinkle with orange zest, remaining sesame seeds and fried sage leaves.
