Salmon Sandwiches With Pea Shoot Salad And Cilantro Yogurt

  1. Spread one side of each piece of salmon with curry paste Set aside 10 minutes.
  2. Meanwhile, toss together pea shoots, green onions, and mint. Season to taste and set aside.
  3. In a small bowl, combine yogurt, cilantro, peas, and garlic. Season to taste.
  4. Heat oil in a large skillet on medium. Cook salmon, seasoned-side down, 3-4 minutes. Turn and cook a further 1-2 minutes, until just cooked through. Transfer to a plate.
  5. Top the bottom half of each roll with a little salad, a piece of salmon, and yogurt sauce. Cover with tops of rolls. Serve with remaining salad.
